	<title>Gluten Sensitivity is the new IBS</title>
	<description>&lt;strong&gt;Gluten free diet &amp;lsquo;not a lifestyle choice&amp;rsquo;, according to new survey &amp;amp; expert opinions&lt;br /&gt;
&lt;/strong&gt;&lt;br /&gt;
New research reveals that 70% of healthcare professionals are not confident in diagnosing gluten sensitivity in patients echoing the diagnostic difficulties historically seen with IBS. Gluten sensitivity appears to have similar symptoms to coeliac disease or wheat allergy, but its existence has been questioned by some health commentators who say gluten avoidance is simply a lifestyle choice. Not true, say the experts, who consider &lt;a href=&quot;/gluten-sensitivity/what-is-gluten-sensitivity/&quot;&gt;gluten sensitivity&lt;/a&gt; to be the most prevalent condition associated to gluten with up to 6 times more sufferers than the more widely known coeliac disease. &lt;br /&gt;
&lt;br /&gt;
Speaking on behalf of DS-gluten free, dietitian Melissa Wilson, said: &amp;ldquo;Gluten sensitivity is facing the same diagnostic difficulties that IBS faced 10 years ago; GPs and dietitians knew it existed, but were unsure of its origin or treatment. Patients were left either without the appropriate advice, or worse, simply sent on their way. We should learn a valuable lesson from the history of IBS and not tar gluten sensitivity with the same brush.&amp;ldquo; &lt;br /&gt;
&lt;br /&gt;
Professor David Sanders, Consultant Gastroenterologist at the Royal Hallamshire Hospital and University of Sheffield, said: &amp;ldquo;Cutting gluten from the diet is often reported as being a lifestyle choice - mainly for women - or an &amp;lsquo;excuse&amp;rsquo; to cut out a whole food group from the diet. But this simply isn&amp;rsquo;t the case in those with gluten sensitivity who largely just switch to gluten free equivalents of what they&amp;rsquo;ve traditionally eaten. A growing number of people are recognising their symptoms to be attributed to gluten sensitivity and avoiding gluten may be the only way for them to live, symptom free.&amp;rdquo;&lt;br /&gt;
&lt;br /&gt;
The survey, commissioned by DS-gluten free, reported on the opinions and understanding of GPs and dietitians about gluten sensitivity, with surprising findings. Around 90% of dietitians and 86% of GPs claimed to be aware of it but more than half of them had only a limited or average understanding of the condition. More than 70% of both professions reported not feeling confident or needing to seek further information before managing a patient with gluten sensitivity.&lt;br /&gt;
&lt;br /&gt;
Melissa, continued: &amp;quot;This survey demonstrates that serious confusion exists when experts try to diagnose or manage gluten sensitivity. GPs and dietitians are telling us that they do not feel there is enough information available about gluten sensitivity, despite reporting high numbers of patients displaying the symptoms.&amp;ldquo; &lt;br /&gt;
&lt;br /&gt;
It is estimated that gluten sensitivity occurs in up to 6% of the population,1 making it by far the most common gluten-related disorder; coeliac disease affects around 1%. Despite this, only 3% of dietitians spontaneously listed gluten sensitivity as being the most common disorder associated to gluten, with the majority listing coeliac disease. &lt;br /&gt;
&lt;br /&gt;
Cases of gluten sensitivity can be identified where a gluten reaction has occurred but both allergic and autoimmune mechanisms have been ruled out. Symptoms including: abdominal pain &amp;amp; bloating, diarrhoea, constipation, headache, fatigue, limb numbness and anaemia are further indicators of gluten sensitivity. Finally, diagnosis can be confirmed by exclusion of gluten from the diet with a resultant remittance of symptoms.&lt;br /&gt;
&lt;br /&gt;
A recent global consensus meeting, the results of which were published in the journal BMC Medicine discussed the spectrum of gluten-related disorders, including existing conditions such as coeliac disease and wheat allergy, both of which have a clear diagnostic pathway. The consensus concluded that gluten sensitivity should not only be recognised as a condition but also treated as one.&lt;br /&gt;

	<title>experts recognise gluten sensitivity</title>
	<description>&lt;strong&gt;Sensitivity to gluten affects millions globally, not just coeliacs!&lt;br /&gt;
&lt;/strong&gt;&lt;br /&gt;
Eating gluten could be responsible for the ill effects suffered by millions of people, not just coeliacs, according to the findings of a global consensus meeting, published today in the journal BMC Medicine*. &lt;br /&gt;
&lt;br /&gt;
Alessio Fasano MD, Professor of Medicine, University of Maryland, led the meeting which took place in London in February 2011; fifteen global academics made up the panel of experts. The meeting discussed the spectrum of disorders relating to gluten, including existing conditions such as coeliac disease and wheat allergy, both of which can be diagnosed with specific tests. Alongside the existing conditions, &lt;a href=&quot;/gluten-sensitivity/what-is-gluten-sensitivity/&quot;&gt;gluten sensitivity&lt;/a&gt; was identified as a condition which could potentially affect many more people globally than coeliac disease or wheat allergy. &lt;br /&gt;
&lt;br /&gt;
Gluten sensitivity appears to exist alongside the other gluten-related conditions and shares many of the symptoms of coeliac disease, including: chronic diarrhoea, constipation, &lt;a href=&quot;/gluten-sensitivity/symptoms-of-gluten-sensitivity/abdominal-pain/&quot;&gt;abdominal pain&lt;/a&gt; &amp;amp; &lt;a href=&quot;/gluten-sensitivity/symptoms-of-gluten-sensitivity/bloating/&quot;&gt;bloating&lt;/a&gt;, headaches, weight loss, behavioural changes, bone or joint pain, muscle cramps, leg numbness and chronic fatigue . Recognising gluten sensitivity as a disorder will help non-coeliacs and non-wheat allergic individuals to identify the cause of their symptoms and take steps to help reduce them. &lt;br /&gt;
&lt;br /&gt;

&amp;ldquo;Gluten sensitivity could affect many more people than coeliac disease. In evolutionary terms, gluten is a relatively new foodstuff for the digestive system and we have noticed a trend of increased diagnosis of coeliac disease over the past decade. Many more people follow gluten-free diets than have coeliac disease because they find that their symptoms improve on a gluten-free diet. Research in this area is beginning to support what these individuals have been saying &amp;ndash; that cutting gluten from the diet of certain individuals can improve their symptoms even if they do not have clinically proven coeliac disease. &amp;ldquo;&lt;br /&gt;
&lt;br /&gt;
The experts believe that by putting forward a proposal of how to best diagnose gluten sensitivity within the spectrum of gluten-related disorders, millions of people worldwide could find answers to the questions they have about their symptoms.&lt;br /&gt;
&lt;br /&gt;
The findings from the consensus meeting are also supported by additional research published in Expert Reviews in Gastroenterology and Hepatology**. The research highlights the emergence of a separate condition to coeliac disease which also responds well to a gluten-free diet. The research concludes that the condition - gluten sensitivity - should not only be recognised as a condition but also treated as one.&lt;br /&gt;
&lt;br /&gt;
Michelle Shinn, Retail Brand Manager at DS-gluten free, said: &amp;ldquo;We see many non-coeliacs opting for a gluten-free diet, and benefiting from it; the recognition of this emerging condition certainly accounts for this switch in consumer behaviour. People who avoid gluten are often labelled as faddy eaters when the truth is gluten causes real problems for them. A CALLINGTON pensioner who was unable to eat Cornish pasties for health reasons can now enjoy his favourite dish once again.&lt;br /&gt;

A sudden heart attack four years ago led to Alex Johns developing coeliac disease, putting a stop to his love of the Cornwall classic. &lt;br /&gt;
&lt;br /&gt;

This wheat- and gluten-free Normandy Apple tart looks beautiful and tastes delicious. &lt;br /&gt;

Top tip: This tart looks lovely displayed on a cake stand. Serve warm with whipped cream, vanilla cream or Greek yoghurt.&lt;br /&gt;

Ingredients&lt;br /&gt;
Base&lt;br /&gt;
1 packet of Trufree Digestive biscuits &lt;br /&gt;
75g butter&lt;br /&gt;
&lt;br /&gt;
Frangipane&lt;br /&gt;
100g butter at room temperature&lt;br /&gt;
100g caster sugar&lt;br /&gt;
2 medium eggs, beaten&lt;br /&gt;
100g ground almonds&lt;br /&gt;
25g cornflour&lt;br /&gt;
1 tablespoon Amaretto or Brandy&lt;br /&gt;
&lt;br /&gt;
Topping&lt;br /&gt;
2 red skinned eating apples&lt;br /&gt;
Caster sugar for sprinkling&lt;br /&gt;
50g apricot jam, gluten free&lt;br /&gt;
&lt;br /&gt;
Method&lt;br /&gt;
Preheat the oven 180&amp;deg;C/ 160&amp;deg;C - 170&amp;deg;C for fan/ Gas mark 4&lt;br /&gt;
&lt;br /&gt;
Line base a 20cm sandwich cake tin with greaseproof or baking paper&lt;br /&gt;
&lt;br /&gt;
To make the base: Melt the butter in a pan. Whiz the digestive biscuits in a food processor to finely crush or place in a study bag and crush with a rolling pin, add to the butter and mix together. Tip into the cake tin, press down and level with the back of a spoon. Chill for 20 minutes.&lt;br /&gt;
&lt;br /&gt;
Meanwhile make the frangipane: Beat the butter and sugar together in a large mixing bowl, gradually add the eggs, beating well after each addition.&lt;br /&gt;
&lt;br /&gt;
Add the Amarettoor Brandy, stir in the ground almonds and cornflour and pour the frangipane over the biscuit base, spreading it evenly.&lt;br /&gt;
&lt;br /&gt;
Half the apples vertically and core, slice them crosswise into thin slices and place over the frangipane slightly over lapping each one. Press down lightly.&lt;br /&gt;
&lt;br /&gt;
Place in the preheated oven and cook for 25 - 30 minutes until the frangipane is set. Remove from the oven and sprinkle caster sugar over the apples, replace into the oven and continue cooking for a further 10 minutes.&lt;br /&gt;
&lt;br /&gt;
Cool in tin, remove and place on a baking sheet. Before serving warm the apricot jam and brush over the apples to glaze, the tart is best served warm with cream or Greek yogurt. &lt;br /&gt;

Makes: 16&lt;br /&gt;
Preparation time: 15-20 mins&lt;br /&gt;
Cooking time: 60 minutes&lt;br /&gt;

Ingredients&lt;br /&gt;
Base&lt;br /&gt;
85g unsalted butter&lt;br /&gt;
100g continental dark chocolate&lt;br /&gt;
125g (1 Pack) Trufree Bourbon Biscuits, crushed&lt;br /&gt;
50g desiccated coconut, lightly toasted&lt;br /&gt;
50g walnuts, roughly chopped &lt;br /&gt;
85g glace cherries, quartered&lt;br /&gt;
50g crystallised papaya&lt;br /&gt;
&lt;br /&gt;
Topping&lt;br /&gt;
150g continental dark chocolate&lt;br /&gt;
5mlsp walnut oil or groundnut oil&lt;br /&gt;
&lt;br /&gt;
Baking tin 20cm x 20cm lightly greased&lt;br /&gt;
&lt;br /&gt;
Method&lt;br /&gt;
&lt;br /&gt;
To make the base: melt the butter and chocolate together in a medium bowl placed over a pan of hot water (not boiling).&lt;br /&gt;
&lt;br /&gt;
Remove the bowl from the pan and stir in the remaining base ingredients.&lt;br /&gt;
&lt;br /&gt;
Tip the mixture into the prepared tin, spreading it level with the back of a spoon. Refrigerate for 30 minutes.&lt;br /&gt;
&lt;br /&gt;
For the topping: Melt the chocolate and oil together in a bowl over a pan of hot water. Allow to cool for a few minutes before pouring over the biscuit base.&lt;br /&gt;
&lt;br /&gt;
Spread the chocolate over the base with a knife and then tilt to and fro to allow the chocolate to completely level and become smooth.&lt;br /&gt;
&lt;br /&gt;
Refrigerate again for 30 minutes but before the chocolate topping has completely chilled and hard, mark out the portions by just cutting the chocolate with a sharp knife. Chill until ready to serve!&lt;br /&gt;</description>

Cherry Scone Twists&lt;br /&gt;
Delicious served warm straight from the oven, or cold on the day of baking.&lt;br /&gt;
&lt;br /&gt;
Quick reference&lt;br /&gt;
Makes 8-10 cakes &lt;br /&gt;
Preparation time: 10-15 minutes&lt;br /&gt;
Cooking time: 10 minutes&lt;br /&gt;
Oven temperature: 200C/400F/Gas Mark 6&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
1 sachet (250g) Dietary Specials White Mix&lt;br /&gt;
10mlsp (2tsp) gluten free baking powder&lt;br /&gt;
25g (1oz) caster sugar&lt;br /&gt;
50g (2oz) soft margarine or spread&lt;br /&gt;
1 medium egg beaten&lt;br /&gt;
45 &amp;ndash; 60ml (3-4tbsp) milk&lt;br /&gt;
50g (2oz) glace cherries, chopped&lt;br /&gt;
&lt;br /&gt;
Method:&lt;br /&gt;
1. Mix together well White Mix, baking powder and sugar. &lt;br /&gt;
2. Fork in spread to resemble fine breadcrumbs, add the cherries. &lt;br /&gt;
3. Stir in egg and sufficient milk to give soft not sticky dough. &lt;br /&gt;
4. On a surface dusted with Mix, knead lightly for 1 minute then roll out 1cm (1/2&amp;rdquo;) thick. &lt;br /&gt;
5. Use a 7.5cm (3&amp;rdquo;) cutter out rounds, then remove centres using a 3.5cm (1&amp;rdquo;) cutter. &lt;br /&gt;
6. Twist each ring to form a figure eight. Re-knead trimmings and repeat process. &lt;br /&gt;
7. Place well apart on a greased baking sheet. &lt;br /&gt;
8. Lightly brush with milk and bake in a preheated oven for 10 minutes until well risen and golden.&lt;br /&gt;</description>

Smoked Peppered Mackerel with Yogurt and Mustard Dressing&lt;br /&gt;
&lt;br /&gt;
Quick reference &lt;br /&gt;
Preparation time: 5 &amp;ndash; 8 minutes &lt;br /&gt;
Cooking time &amp;ndash; refreshing the roll&lt;br /&gt;
&lt;br /&gt;
Ingredients &lt;br /&gt;
2 Dietary Specials Rustic Rolls &lt;br /&gt;
Rocket and watercress &lt;br /&gt;
1 peppered smoked mackerel fillet (depending on size) &lt;br /&gt;
6 slices of cucumber &lt;br /&gt;
Dressing &lt;br /&gt;
10ml (2 tsp) natural yogurt &lt;br /&gt;
5ml (1 tsp) lime juice &lt;br /&gt;
2.5ml (1/2 tsp) horseradish sauce (gluten free)&lt;br /&gt;
&lt;br /&gt;
Method &lt;br /&gt;
1. Mix all the ingredients for the dressing together in a small bowl. &lt;br /&gt;
2. Cut the rolls in half, place the rocket and watercress onto the bottom half of the 2 rolls, place on the cucumber followed by broken pieces of mackerel, spoon the dressing on top of the mackerel followed by the roll top. &lt;br /&gt;

Avocado and Egg&lt;br /&gt;
&lt;br /&gt;
Quick reference &lt;br /&gt;
Preparation time: 5 &amp;ndash; 10 minutes &lt;br /&gt;
Cooking time: 6 minutes &lt;br /&gt;
Cooling time: 30 minutes&lt;br /&gt;
&lt;br /&gt;
Ingredients &lt;br /&gt;
4 slices of Dietary Specials Multigrain Bread &lt;br /&gt;
1 large egg &amp;ndash; hardboiled and cooled &lt;br /&gt;
1 small ripe avocado &lt;br /&gt;
5ml (1 tsp) lemon juice &lt;br /&gt;
10ml (2tsp) mayonnaise (gluten free) &lt;br /&gt;
Cress or pea sprout leaves&lt;br /&gt;
&lt;br /&gt;
Method &lt;br /&gt;
1. Cut the avocado in half, remove the stone and peel away the skin, cut each half into 4 slices and drizzle over the lemon juice. Slice the egg into 6 or 8 rings. &lt;br /&gt;
2. Place 4 slices of avocado onto 2 slices of bread, top with the egg slices and some cress or pea sprout leaves. &lt;br /&gt;
3. Spread the mayonnaise over the other 2 slices of bread and place on top of the filled sandwich &lt;br /&gt;
