savoury cheese crisps


These crisps are great with dips or on their own as a snack.

ingredients

115g (4oz) Dietary Specials White Mix
Large pinch of cayenne pepper
Large pinch of salt
50g (2oz) butter
50g (2oz) Gruyere cheese, finely grated
1 egg yolk
2-3 x 5ml sp (2-3 tsp) water
Topping
Egg white
Mustard seeds
Poppy seeds

method

1. In a large bowl mix together well the White Mix, pepper and salt.
2. Rub in butter until mixture resembles fine breadcrumbs. Stir in the cheese and work in the egg yolk and sufficient water to give soft, not sticky dough.
3. Lightly dust the work surface with White Mix, knead the mixture lightly for 1 minute.
4. Roll dough out thinly and cut into triangle, finger or assorted shapes.
5. Brush shapes with a little egg white and sprinkle half with poppy seeds and the remainder with mustard seeds (lightly roll over those topped with seeds).
6. Transfer biscuits to a greased baking sheet and bake in preheated oven for 10 minutes until golden. Cool on wire rack.
