turkey bites or chicken goujons
Tasty strips of crumb coated chicken, great for kids and adults alike.
Ingredients
I small egg, beaten
50g (2oz) dried Dietary Specials breadcrumbs (see recipe below)
225g (8oz) turkey steak cut into bite size pieces or 1 chicken breast cut into strips
Oil for shallow frying
Method
1. Place egg in a bowl and the dried crumbs on a plate.
2. Dip the turkey pieces or chicken strips into the egg, ensure they are well coated and place in the breadcrumbs, turn several times and press the crumbs down on each piece.
3. Heat the oil in a frying pan until hot, fry the turkey pieces for approx. 4-6 minutes or the chicken goujons for 4-5 minutes, turning once.
4. Drain on kitchen paper and serve immediately.
Dried Breadcrumbs
Dried breadcrumbs are really easy to make and are extremely versatile – enabling you to make a variety of breaded dishes that are truly excellent.
Use
Dietary Specials White Bread. Crumble down and dry on a tray at the bottom of the oven, until the crumbs are dry and crisp (taking care not to burn). The crumbs need to be fine, so either put them in a food processor for a minute and grind, or place them in a polythene bag and rollover them several times with a rolling pin. The crumbs can be stored in a jar or a polythene bag for up to one week in the refrigerator.
