avocado & pine nut pasta


A quick and easy gluten free pasta dish the whole family can enjoy.

Suitable for people diagnosed with Coeliac Disease, those who are suffering from a gluten and wheat allergy or intolerance.

  • Preparation time: 10 minutes
  • Cooking time: 10 minutes


ingredients

  • 140g (5oz) DS-gluten free fusilli , or DS-gluten free penne
  • 1 Avocado ,
  • 1 Lemon , ½ for juice & 1 tsp of zest
  • 30ml Natural Soya Yogurt , (2 tbsp)
  • 25g Pine Nuts , (1 oz)
  • 15 mlsp fresh torn Basil , (1 tbsp)
  • Black Pepper , freshly ground

method

1. Cook the Fusilli Pasta in plenty of boiling, lightly salted water with a dash of olive oil for about 9 minutes.
2. Peel and de stone the avocado, cube into a medium bowl, add the lemon zest and juice, mix together.
3. Drain pasta and rinse through with COLD water.
4. Combine avocado, pasta, and yogurt mixture together, add the pine nuts and torn basil
5. Serve topped with freshly ground black pepper.

Cooks Tip:

Rinsing the pasta in cold water prevents the pasta from sticking together and also speeds up the cooling process as the pasta salad is eaten cold.
