Keeping it cool! If you have defrosted the pastry in a microwave is it best to put it into a fridge for 15 minutes, the cooler the pastry the easier it is to use.
You need to knead. Like all gluten free pastry, you need to knead the DS-gluten free pastry for 1-2 minute so that it's pliable.
Roll on... For mini tarts roll out to the thickness of a £1 coin, for quiches and flans the pastry can be slightly thicker.
Dust is a must - Remember to dust the rolling pin and surface with gluten free flour so that the pastry doesn't stick!
