Name: Elizabeth Olsson

Age: 54

Hometown: Manchester

Occupation: Secretary

Favourite holiday destination: Italy – we have spent some beautiful breaks in the Italian lakes drinking wonderful red wine and enjoying the scenery.

When were you diagnosed with coeliac disease? September 2006

Biggest gluten free diet challenge: Eating out is always difficult – I hate making a fuss or asking whether foods are gluten free

Food you miss most: I’ve got a real sweet tooth so ‘real’ cakes and biscuits were a big loss and, on a hot day, I do crave a cold lager

Food you can’t live without: Gluten free snack bars are a life saver. I can carry them in my bag so I know I’ll never go hungry.

Favourite gluten free product: Trufree Custard Creams

My story: I’ve always suffered from bloating and a lack of energy but when I became seriously anaemic and ended up with pneumonia two years ago it became obvious that something was wrong. It took months to get a coeliac diagnosis and then a further six months before I saw a dietitian but I have been gluten free for 18 months now. I still struggle with eating out but have finally go to grips with my diet and am feeling much better.

Top Tip for other coeliacs: Breakfast can be tough if you are staying in a hotel for the night so I always take my own gluten free bread, which most places will happily toast under the grill for me.
