Gluten free girl on the go, Jen Dawson 25, works for our sister brand Glutafin. Jen had been experiencing stomach pains for two years before her symptoms worsened and she went to see her GP. Jen tested negative for coeliac disease and was told that she suffered from irritable bowel syndrome but after keeping her own food diary and excluding gluten containing foods she found following a gluten free diet improved her symptoms. Jen talks about her own experiences on the Glutafin blogs, so we asked her about how she finds following a gluten free diet 'on the go'.

I didn’t follow a strict gluten free diet until about 6 months ago, this was mainly because I hadn’t realised a lot of things contained gluten which I believed were gluten free, for example chips could have been fried with gluten containing foods. I also didn’t realise how much cross contamination can affect someone with a gluten intolerance. In hindsight, there were times when I felt unwell, experiencing my usual symptoms but I could have sworn that I was careful to avoid gluten. I think the reason for this was because I was self-diagnosed and I learnt a lot about the gluten free diet on my own.

Now I’m handling things much better, I’m one of those people that like to eat constantly! A typical breakfast for me is either gluten free muesli and fruit or I’ll have egg on gluten free bread or just toast with jam. I snack a lot on fruits and nuts and I’ll always have DS-gluten free Crispbread under the desk for a stomach rumble emergency! For lunch I’ll either have a gluten free sandwich or soup with the DS-gluten free Ciabatta Rolls.

I do find dinner/tea times hard though, I think living on my own doesn’t help because most recipes serve more than one person. I spoke to a lady once who was diagnosed with coeliac disease and she said to me it really helps if you can cook if you are following a gluten free diet as you can make sure everything you eat isn’t contaminated with gluten. This is very true, but as much as I like trying gluten free recipes sometimes I do wish there was something I could just bung in the microwave once in a while. I knew that DS had just launched a gluten free Tortellini ready meal so I bought one from Sainsbury‘s on my way home so I could try it for tea. I was really excited because I love pasta but thought it would be nice not to have to make a meal from scratch for a change.

I let myself in to my flat and as usual, I was starving. I live in a city centre and sometimes it can take me up to an hour to get home. I looked at the Tortellini and saw that it only took 6 minutes to cook in the microwave. It had been ages since I’d had a gluten containing ready meal but I remembered that it usually takes longer than specified! I put the Tortellini in the microwave and quickly changed out of my work clothes. The microwaved dinged to signal the 6 minutes were up and to my astonishment the meal was ready, the pasta sat bubbling in the creamy, cheese sauce and smelt fantastic. I gave it a quick stir and the sauce was quite thick. So at 6:10pm (a record against my usual tea times) I sat down in front of Come Dine With Me to tuck into my first gluten free pasta ready meal. I can honestly say it was delicious, the pasta itself didn’t taste like some of the gluten free pastas I’d tried and it was filled with meat which made it quite filling and the cream and ham sauce complimented it beautifully. The sauce was quite rich, which I liked but some people might prefer to have it as a luxury, either way it cooked fast and was very tasty!
