And the winners are...


DS-gluten free Brown Ciabatta Rolls!
We were delighted on Wednesday 6th April when the Foodsmatter judging panel crowned our gluten free Ciabattas winners of the “Bread & Bread Mixes” category. Foodsmatter informed us that judges “liked the soft. open texture balanced by the chewy seeds, the pleasant malty flavour, the lack of sugar. A really outstanding product – first bread without codex wheat starch that really manages to successfully mimic the texture of real bread.’”

Further celebrations were in order when the DS-gluten free Shortcrust Pastry was ‘Highly Commended’ in the “Ingredients: flour, stock, pastry and sauces” section. Our gluten and whgluten free pastyeat free frozen readymade pastry has been a storecupboard favourite for gluten free bakers, once defrosted it’s ready to roll and suitable for sweet and savoury dishes. Judges described it as an “enormously useful and convenient addition to a gluten-free larder.” Recipes using the gluten free pastry on the DS-gluten free website include; Cornish Pasties, Mushroom Quiches, Mediterranean vegetable pie, Lemon Meringue, Spinach Ricotta and Sundried Tomato Quiches, Normandy Apple Tart, Mini Savoury Tartlets, Parma Ham Valentine’s Hearts and Chicken and Vegetable Pie.

Our sister brand TRUfree’s wheat and gluten free Chocolate Fingers were ‘Highly Commended’ in the “Sweet Biscuits and Cookies” section . TRUfree were delighted to hear that the judges thought their gluten free fingers were “almost the perfect look-a-like product – almost indistinguishable from the much loved non- freefrom original.”

Just when DS-gluten free didn’t think they could be more proud, the DS-gluten free Brown Ciabatta Rolls were awarded second place for the best free-from food overall! We were so pleased! 

We had a fantastic time at the 2011 Free From Food Awards, we want to say a massive thank you to Foods Matter for organising the event and a congratulations to all of the winners. We can’t wait for next year!

Idea for a new gluten-free product.

How about making some pasta dough as for the fusilli and then adding spinach to make it green.

Then make it into tree shapes, either by extruding the outlines of trees, both conifers and evergreens, for cooking as if fusilli or by making solid filled flat shapes of trees, both conifers and evergreens, for cooking as if lasagne.

It is International Year of Forests: 2011 so it is topical.

Congratulations on the very well deserved awards. I am definitely a fan of both white and brown ciabatta rolls. DS shortcrust pastry is so easy to use and though I try to avoid too many biscuits and cakes, the Trufree chocolate fingers are a real treat.

Really enjoy your ciabatta rolls, especially the brown. At last an enjoyable taste. Will now try the sausage rolls and frozen pastry using your recipes. My only criticism is directed at the "stores" who seem to be very wary with regard to stocking gluten-free goods which to me is a very up and coming commercially viable market. I congratulate your Company on the effort you are producing to offer variety to our requirements. Is it possible to receive a list of what is stocked and in which stores in my region as I have difficulty in finding such goods. My Post-code is EH54 8QA. To be able to pin-point the goods and stores would be a great help. Thank you.
